Chicken & Wild Rice Soup


Homemade creamy chicken & wild rice soup with a nice toasted baguette. Yummy dinner.

Ingredients:
1 whole rotisserie chicken (pulled meat only no skin please)
1 large onion diced
1 cup carrots diced
1 cup celery diced
1 1/2 cups wild rice medley
1 small can cream of mushroom
1/2 cup heavy cream or you can use 1% milk
3 - 4 cups of chicken broth
4 tablespoons butter
4 tablespoons flour
3 tablespoons olive oil
1 tablespoon Italian seasoning (I got a big container at Costco. I use it all the time for my soups it's so worth it)
1 teaspoon pepper & salt

1. Using a big soup pot add olive oil & butter blend together and all diced vegetables saute. Add spices and add flour mix well until flour is cooked. Don't over cook the flour. You don't want a dark roue. Mix until it turns into a paste. Add wild rice medley and cook for 3 minutes.

2. Add pulled chicken meat and broth. Simmer and then whisk in cream of mushroom. Simmer for 15 minutes on medium heat. Add heavy cream or milk and simmer on low heat for 5 minutes. Serve with toasted baguette and mixed greens.

Easy soup and salad.
